Creamy Mushroom Soup

Ingredients

  • 500 g brown mushrooms
  • 2 piece shallots
  • 2 cloves garlic
  • 700 ml vegetable stock
  • 200 ml cream
  • 1 bunch thyme
  • 100 ml white wine
  • 30 g butter
  • 20 g flour
  • 2 piece slices of white bread
  • 1 pinch salt

Instructions

  1. Clean the mushrooms and slice them. Set aside a third for the garnish. Finely dice the shallots and garlic.
  2. Melt the butter in a pot and fry the shallots, garlic and remaining mushrooms until the liquid has evaporated. Dust with flour and cook briefly.
  3. Deglaze with the white wine, pour in the stock and simmer for 15 minutes. Blend the soup smooth, stir in the cream and thyme and season with salt.
  4. Dice the white bread and toast it golden in a little butter. Briefly sear the reserved mushrooms. Serve the soup topped with mushrooms and croutons.
