Pit the cherries. Pick over the raspberries and currants and rinse them briefly.

Bring the water and 70 grams of sugar to a boil, add the berries and cherries and let them simmer gently for three minutes.

Stir 30 grams of cornstarch smooth with a little cold water, mix into the fruit and bring to a boil once until glossy and set, then chill.

For the vanilla sauce, heat the milk with the vanilla sugar. Whisk the egg yolks with the remaining sugar and cornstarch, stir in and let it thicken while stirring.
