White Asparagus with Hollandaise

Ingredients

  • 1500 g white asparagus
  • 800 g new potatoes
  • 150 g butter
  • 3 piece egg yolks
  • 1 piece lemon
  • 0.5 bunch parsley
  • 1 pinch sugar
  • 1 pinch nutmeg
  • 1 pinch salt

Instructions

  1. Peel the asparagus and trim the woody ends. Wash the potatoes and cook them in salted water for about twenty minutes.
  2. Simmer the asparagus gently in plenty of water with salt, sugar and a squeeze of lemon juice for about fifteen minutes until just tender.
  3. For the hollandaise, melt the butter. Whisk the egg yolks with a little lemon juice over a warm water bath until creamy, then slowly whisk in the melted butter until the sauce thickens. Season with salt and nutmeg.
  4. Arrange the asparagus and potatoes on plates, spoon over the hollandaise and serve sprinkled with chopped parsley.
