One-Pot Chicken and Rice

Ingredients

  • 300 g long-grain rice
  • 500 g chicken breast
  • 2 piece bell peppers
  • 150 g peas
  • 1 piece onion
  • 2 cloves garlic
  • 700 ml chicken broth
  • 10 g paprika powder
  • 30 g tomato paste
  • 30 ml olive oil
  • 1 bunch parsley

Instructions

  1. Cut the chicken into bite-sized pieces. Heat the oil in a large pot and brown the chicken all over, then lift it out.
  2. Soften the onion, garlic and peppers in the same pot. Stir in the paprika and tomato paste and toast briefly.
  3. Add the rice, pour in the broth and return the chicken to the pot. Cover and simmer gently for 18 minutes.
  4. Fold in the peas and cook for another 3 minutes until the rice is tender and has soaked up the liquid.
  5. Season with salt and pepper and serve scattered with fresh parsley.
