Ingredients

  • 300 g basmati rice
  • 1 can chopped tomatoes
  • 2 piece red bell peppers
  • 1 piece large onion
  • 3 cloves garlic
  • 30 g tomato paste
  • 600 ml vegetable stock
  • 30 ml olive oil
  • 5 g sweet paprika
  • 5 g dried oregano
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  1. Finely dice the onion, garlic and peppers. Heat the olive oil in a large pot and sweat the vegetables for a few minutes until softened.
  2. Stir in the tomato paste and paprika and toast briefly, then pour in the chopped tomatoes and the vegetable stock.
  3. Stir in the rice, bring to a boil and simmer covered over low heat until the liquid is absorbed and the rice is tender.
  4. Season with oregano, salt and pepper and let it steam off briefly before serving.
