Ingredients

  • 400 g wheat noodles
  • 60 g sesame paste (tahini)
  • 40 g peanut butter
  • 40 ml soy sauce
  • 20 ml rice vinegar
  • 15 ml sesame oil
  • 1 piece cucumber
  • 3 piece spring onions
  • 1 clove garlic
  • 20 g toasted sesame seeds
  • 10 g sugar

Instructions

  1. Cook the noodles according to the packet, rinse under cold water and drain well.
  2. For the sauce, whisk the tahini, peanut butter, soy sauce, rice vinegar, sesame oil, crushed garlic and sugar until smooth, loosening with a little water if needed.
  3. Cut the cucumber into fine strips and slice the spring onions. Toss the drained noodles with the sauce.
  4. Fold through the cucumber and spring onions and serve cold, sprinkled with toasted sesame seeds.
