Speckbohnen (Green Bean Bundles in Bacon)
A German classic that comes to the table with roasts and game all over Germany: slim green beans, cooked until just tender with savory and wrapped into little bundles in thin slices of smoked streaky bacon. In the pan the bacon turns crisp and seasons the beans from the outside, while inside they stay juicy and fresh green. Serves 4.

Instructions
- 1
Wash the green beans, trim the ends and halve any very long beans once.
- 2
Bring plenty of water to the boil with the salt and the dried savory and cook the beans uncovered until just tender.
- 3
Drain the beans, refresh them in cold water straight away and leave them to drain well so they keep their green colour.
- 4
Gather eight to ten beans at a time into a bundle and wrap them tightly with a slice of smoked streaky bacon.
- 5
Melt the butter or margarine in a frying pan and fry the bundles over medium heat on all sides until the bacon is crisp.
- 6
Season the Speckbohnen with pepper and nutmeg and serve at once.
