  • 400 g Fleischwurst (German bologna-style sausage, in one piece, skinless)
  • 4 piece pickled gherkins
  • 1 piece small onion
  • 200 g mayonnaise (shop-bought)
  • 100 g natural yoghurt
  • 3 tbsp gherkin brine (from the jar)
  • 1 tsp medium-hot mustard
  • 1 pinch sugar
  • 1 pinch salt
  • pepper to taste
  • 2 tbsp chopped parsley
  • 4 piece bread rolls

Instructions

  1. Remove the skin from the Fleischwurst, cut it into thin slices and then cut these into fine strips.
  2. Cut the pickled gherkins into fine strips as well and dice the small onion very finely.
  3. Stir the mayonnaise smooth in a bowl with the natural yoghurt, the gherkin brine, the medium-hot mustard and the sugar.
  4. Fold the sausage strips, the gherkin strips and the diced onion into the sauce and season with salt and pepper.
  5. Cover the Fleischsalat and leave it in the fridge for the flavours to develop.
  6. Taste it again before serving, scatter it with the chopped parsley and bring it to the table with the fresh bread rolls.
