Air Fryer Whole Fleischwurst (German bologna-style sausage)

⏱ 20 min · 🍽️ 4 Servings · 🧂 5 Ingredients

Ingredients

  • 600 g Fleischwurst (German bologna-style sausage, in one piece, scalded sausage)
  • 1 tsp medium-hot mustard
  • 1 tsp sweet paprika
  • 1 tsp rapeseed oil
  • 4 piece bread rolls

Instructions

  1. Score the Fleischwurst all over in a diamond pattern about 1 cm apart, cutting only halfway in and not right through the sausage.
  2. Mix the medium-hot mustard with the sweet paprika and the rapeseed oil and brush the sausage all over with it, including inside the cuts.
  3. Preheat the air fryer to 190 °C.
  4. Lay the sausage in the basket in a single layer, with space around it and without stacking anything; larger quantities need two batches.
  5. Turn the sausage and finish cooking until the diamonds have opened out and browned and the sausage is 70 °C hot all the way through; a scalded sausage is already cooked and only needs to be heated through.
  6. Cut the sausage into thick pieces and bring it to the table with the bread rolls straight away.

Air Fryer Whole Fleischwurst (German bologna-style sausage)

A German classic that belongs to every children's birthday party all over the country: a piece of Fleischwurst, scored in a diamond pattern, brushed with mustard and paprika and crisped up in the hot airflow. As it cooks the diamonds open out, the edges turn brown and crisp, and inside the sausage stays soft and juicy. In terms of flavour, honestly, not much happens — it is about the crust and the fun of the opening diamonds, and the machine does that better than the pan because the sausage browns all round at the same time.
