French Onion Soup

Ingredients

  • 800 g onions
  • 50 g butter
  • 1 l beef stock
  • 150 ml white wine
  • 4 slices baguette
  • 150 g grated gruyère
  • 2 cloves garlic
  • 5 g sugar
  • 10 g flour
  • 1 pinch salt and pepper

Instructions

  1. Slice the onions into fine rings and braise in butter over medium heat with a pinch of sugar for 25 minutes until soft and deep golden.
  2. Dust with the flour, toast briefly, deglaze with white wine and pour in the stock. Simmer everything for 15 minutes and season with salt and pepper.
  3. Toast the baguette slices, rub with garlic and top with gruyère.
  4. Ladle the soup into ovenproof bowls, float a cheese crouton on each and grill until golden and bubbling.
