Ingredients

  • 400 g Fleischwurst or Regensburger-style scalded sausage (in one piece, skinless)
  • 2 piece onions (red)
  • 3 piece pickled gherkins
  • 5 tbsp white wine vinegar
  • 4 tbsp rapeseed oil
  • 1 tsp medium-hot mustard
  • 1 pinch sugar
  • salt to taste
  • pepper to taste
  • 3 tbsp snipped chives
  • 4 piece pretzels

Instructions

  1. Remove the skin from the Fleischwurst, cut it into thin slices and cut these into narrow strips.
  2. Peel the onions and cut them into very fine rings. Quarter the pickled gherkins lengthways and cut them into strips.
  3. For the marinade, whisk the white wine vinegar with the rapeseed oil, the medium-hot mustard and the sugar and season with salt and pepper.
  4. Mix the sausage strips, the onion rings and the gherkin strips with the marinade in a bowl.
  5. Cover the salad and leave it to steep, stirring it once.
  6. Taste again with salt and pepper before serving, scatter with the snipped chives and bring it to the table with the pretzels.
