  • 2 piece white radishes (radi)
  • 2 tsp salt
  • 2 tbsp white wine vinegar
  • 2 tbsp rapeseed oil
  • pepper to taste
  • 1 bunch chives
  • 1 bunch radishes
  • 200 g Emmental in one piece
  • 200 g mature mountain cheese
  • 200 g smoked ham (thinly sliced)
  • 4 piece gherkins
  • 4 piece pretzels
  • 60 g butter or margarine
  • 1 tsp caraway seeds

Instructions

  1. Peel both radishes and cut off the leaf ends.
  2. Using a spiral cutter or a sharp knife, cut one radish all the way round at an angle, almost down to the base, and carefully pull it apart into one long spiral.
  3. Sprinkle the spiral with one teaspoon of salt and leave it until it weeps and bends easily.
  4. Shave the second radish into thin slices and mix with the remaining salt, the white wine vinegar, the rapeseed oil and pepper. Leave the radish salad to sit.
  5. Snip the chives into fine rings and fold half of them into the radish salad.
  6. Trim and wash the radishes and set them aside with some of their green tops.
  7. Cut the Emmental and the mountain cheese into bite-sized pieces and batons, and roll up the slices of smoked ham loosely.
  8. Cut the gherkins lengthways into a fan and press them apart slightly.
  9. Arrange everything on a large wooden board, add the pretzels and set out the butter or margarine in a small dish. Scatter the radish spiral and the radish salad with the caraway seeds and the remaining chives.
