  • 500 g elderberries (ripe, weighed stripped from the umbels)
  • 200 ml water
  • 100 g sugar
  • 1 piece cinnamon stick
  • 2 piece cloves
  • 2 piece apples
  • 2 piece pears
  • 1 tbsp cornflour
  • 1 piece unwaxed lemon (juice)

Instructions

  1. Strip the elderberries from the umbels with a fork, sorting out all green, unripe berries as well as the stalks. Then wash the berries thoroughly and let them drain.
  2. Put the berries into a pan with the water, the sugar, the cinnamon stick and the cloves and cook over medium heat until the berries burst and release their juice.
  3. Peel and quarter the apples and pears, remove the cores and cut the fruit into cubes of about 1 cm.
  4. Add the diced fruit to the berries and carry on cooking, uncovered, until it is soft but not yet falling apart.
  5. Stir the cornflour smooth with 2 tbsp cold water, pour it into the bubbling compote while stirring and let it come up to the boil once until it thickens.
  6. Take out the cinnamon stick and the cloves, season the Hollerkoch with the squeezed lemon juice and serve it warm or cold.
