Toast the sunflower seeds in a dry pan over medium heat, stirring, until golden brown, then leave them to cool on a plate.

Peel the carrots and grate them finely on a fine grater.

Wash the apples, quarter them and remove the cores. Grate the unpeeled quarters as well and mix them with the lemon juice straight away so that they do not turn brown.
