Mango Chia Pudding

Ingredients

  • 60 g chia seeds
  • 200 ml coconut milk
  • 200 ml oat milk
  • 15 g maple syrup
  • 1 piece ripe mango
  • 0.5 piece lime, juiced
  • 10 g coconut chips

Instructions

  1. Whisk the chia seeds with the coconut milk, oat milk and maple syrup. Let the mixture stand for 10 minutes, then give it another vigorous stir to break up any clumps.
  2. Cover and chill in the fridge for at least 4 hours, ideally overnight, until thick and spoonable.
  3. Peel the mango and cut the flesh off the stone. Blend two thirds of it with the lime juice until silky, and dice the rest into small cubes.
  4. Spoon the pudding into two glasses, layer the mango puree on top and finish with the mango cubes and coconut chips.
