Ingredients

  • 1 teaspoon baking powder
  • 2 teaspoons butter
  • 1 cup (200 g) cooked mashed carrots (just steam them and then mash them)
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 2 cups (220 g) flour
  • 1/4 teaspoon (2 g) ground cloves
  • 1/4 teaspoon (2 g) nutmeg
  • 2 tablespoons (30 ml) orange juice
  • 1 tablespoon grated orange peel
  • 1/2 teaspoon (3 g) powdered ginger
  • 2 cups powdered sugar (icing sugar)
  • Salt to taste
  • 3/4 cup (150 g) sugar

Instructions

  1. Preheat the oven to 400F (220C)In a mixing bowl, cream the butter and sugar.
  2. Add the eggs one at a time and beat until fluffy.
  3. Add the mashed carrots
  4. In another bowl, mix all dry ingredients together.
  5. Add the dry ingredients to the creamed mixture.Using a large spoon, drop globs of the batter onto a large baking sheet covered in parchment paper. How big you make the globs depends on how large you want your cakies (er, whoopie pies).
  6. Bake for about 10 minutes or until toothpick inserted in center of pies comes out dry.
  7. Let cool.Directions for filling:Cream the powdered sugar and butter together.
  8. Add orange juice and peel and beat until smooth.When the pies have cooled, sandwich the filling between two pies. Repeat. Repeat. Etcetera.
