Air Fryer Cevapcici
A dish found on German menus and at barbecues all over Germany, even though it does not come from here: spicy little minced meat rolls with garlic, sweet paprika and cumin. They turn a deep brown on the outside and stay juicy inside, while the raw onion rings and the pepper paste alongside add heat and freshness. From the grill they pick up a smoky flavour, but in the basket no fat spits and nothing falls through the grid.

Instructions
- 1
Peel the onion and dice it very finely, peel the garlic and chop it finely.
- 2
Knead the minced meat firmly with the onion, the garlic, the egg, the breadcrumbs, the salt, the pepper, the sweet paprika and the ground cumin into a smooth mixture.
- 3
Shape about 16 finger-thick rolls from the mixture and rub them thinly all over with the rapeseed oil.
- 4
Preheat the air fryer to 190 °C.
- 5
Lay the rolls in the basket in a single layer with space between them and do not stack anything; cook larger quantities in two batches. Fry at 190 °C.
- 6
Turn the rolls and finish cooking at 190 °C until the centre has reached 70 °C. Minced meat of any kind is never left pink, not even beef.
- 7
Peel the onions for serving and cut them into thin rings.
- 8
Serve the cevapcici hot with the raw onion rings and the red pepper paste.
