Salmon Rolls with Horseradish Cream

A German classic that comes to the table all over the country: salmon rolls with horseradish cream are the festive starter for Christmas and New Year's Eve. Tender smoked salmon encloses a creamy filling of cream cheese, horseradish and dill that shows to particular advantage on dark pumpernickel. A squeeze of lemon makes the little bites fresh.
