Slice the onions into thin strips and caramelize them slowly with the butter and sugar over medium heat until deep golden, stirring now and then.

For the sauce, stir together the mayonnaise, ketchup, mustard, and very finely chopped pickles. Wash the lettuce and slice the tomato.

Divide the beef into 4 portions without overworking it and shape loose patties about 2 cm thick and slightly wider than the buns. Season generously with salt and pepper only just before cooking.
