  • 250 g plain flour (type 405)
  • 150 g butter or margarine
  • 100 g sugar
  • 1 pack vanilla sugar
  • 1 pinch salt
  • 1 tsp grated lemon zest (unwaxed)
  • 2 piece egg yolks
  • 1 piece egg yolk for glazing
  • 1 tbsp milk
  • 3 tbsp pearl sugar

Instructions

  1. Quickly knead the flour, the cold butter or margarine in pieces, the sugar, the vanilla sugar, the salt, the grated lemon zest and the two egg yolks to a smooth shortcrust pastry.
  2. Press the dough flat, wrap it in cling film and chill it.
  3. Preheat the oven to 180 °C conventional heat and line three baking trays with baking paper.
  4. Roll the dough into pencil-thick strands about 8 cm long and lay them on the trays as S shapes, spaced well apart.
  5. Whisk the egg yolk for glazing with the milk, brush the pieces thinly with it and scatter over the pearl sugar.
  6. Bake the trays one after another on the middle shelf until the biscuits are golden.
  7. Let the Butter-S firm up briefly on the tray and then leave them to cool completely on a wire rack.
