  • 600 g turkey breast (in one piece)
  • 1 tbsp medium-hot mustard
  • 1 tsp salt
  • pepper to taste
  • 1 tsp sweet paprika
  • 1 tsp dried thyme
  • 8 slice streaky bacon

Instructions

  1. Pat the turkey breast dry all over.
  2. Spread the medium-hot mustard thinly all round the meat.
  3. Mix the salt, the pepper, the sweet paprika and the dried thyme and rub the meat with it.
  4. Lay the slices of streaky bacon around the piece, overlapping like roof tiles, so that it is covered all over, and tuck the ends underneath so that they do not lift up in the airflow.
  5. Preheat the airfryer to 180 °C.
  6. Lay the meat seam side down in the basket in a single layer with space around it and do not stack anything; cook larger quantities in two batches. Cook at 180 °C.
  7. Turn the piece carefully so that the jacket does not come apart, and finish cooking it at 180 °C until the core of the meat has reached 75 °C.
  8. Let the turkey breast rest on a warmed board and only then cut it into slices.
