  • 8 piece Herrings (cleaned and ready to cook, approx. 150 g each)
  • 1 tbsp Lemon juice
  • 1 tsp Salt
  • Pepper to taste
  • 60 g Plain flour
  • 2 tbsp Rapeseed oil

Instructions

  1. Wash the herrings inside and out in cold water and pat them very thoroughly dry.
  2. Drizzle the fish with the lemon juice and season them inside and out with the salt and the pepper.
  3. Put the plain flour on a flat plate, turn the herrings in it all over and tap the excess flour off well. Loose flour would blow around in the airflow and burn onto the basket.
  4. Brush the floured fish thinly all over with the rapeseed oil.
  5. Preheat the air fryer to 190 °C.
  6. Lay four herrings side by side in the basket in a single layer with space between them and do not stack anything; cook larger quantities in two batches. Cook at 190 °C.
  7. Turn the fish carefully with two spatulas and carry on cooking until the skin is crisp and browned and the centre has reached 62 to 65 °C.
  8. Cook the second batch in the same way and serve the herrings hot, or leave them to cool completely for pickling.
