Ham-wrapped leek rolls from the airfryer

⏱ 42 min · 🍽️ 4 Servings · 🧂 8 Ingredients

Ingredients

  • 2 piece leeks
  • 1 tsp salt
  • 8 slice cooked ham
  • 1 tbsp butter or margarine for the dish
  • 100 ml cream
  • pepper to taste
  • 1 pinch nutmeg
  • 60 g grated hard cheese

Instructions

  1. Trim the leeks, cut off the dark green and the roots, slit them lengthways and wash them thoroughly under running water so that no grit is left between the layers.
  2. Cut the leeks into eight pieces about 10 cm long.
  3. Bring plenty of water to the boil with the salt and pre-cook the leek pieces in the pan, then drain them, refresh them in cold water and leave them to drain well. The airfryer does not take this step off your hands: raw leek would stay tough inside the ham, and loose leaves without oil do not belong in the basket.
  4. Wrap each piece of leek in a slice of cooked ham.
  5. Grease a small ovenproof dish with the butter or margarine for the dish and set the rolls in it side by side, seam side down.
  6. Stir the cream together with the pepper and the nutmeg and pour it between the rolls.
  7. Preheat the airfryer to 180 °C.
  8. Stand the dish in the basket in a single layer with space around it and stack nothing on top; if only a smaller dish fits, cook in two runs. The dish caps the airflow, which is why it cooks barely faster here than in the oven — what you save above all is the oven's long preheating. Cook at 180 °C.
  9. Do not turn them, because the rolls are lying in the cream and would fall apart. Instead scatter the grated hard cheese over the top and bake at 180 °C until the crust is golden and the cooked ham has reached 70 °C all the way through.
  10. Leave the rolls to rest briefly and serve them with the cream from the dish.

Ham-wrapped leek rolls from the airfryer

A German starter served all over Germany: pre-cooked pieces of leek wrapped in cooked ham, moistened with cream and baked under a layer of grated hard cheese. The leek turns soft and mild, almost sweet, the ham stays juicy and the cheese crust pulls into threads. The small chamber is hot in three minutes and saves the long preheating of a big oven; the dish, on the other hand, caps the airflow, so the cooking time itself is barely shorter.
