Ingredients

  • 250 g wheat flour (type 550)
  • 1 pack dried yeast (7 g)
  • 40 g sugar
  • 1 pinch salt
  • 120 ml lukewarm milk
  • 30 g soft butter or margarine
  • 1 piece egg (medium)
  • 1 tbsp rapeseed oil
  • 100 g jam
  • 3 tbsp sugar (for rolling)

Instructions

  1. Mix the wheat flour with the dried yeast, the sugar and the salt, then add the lukewarm milk, the soft butter or margarine and the egg and knead everything to a smooth, supple dough.
  2. Cover the dough and leave it to rise in a warm place until it has clearly grown in volume.
  3. Shape the dough into eight equal balls and set them on two pieces of baking paper cut to the size of the basket. Cover and leave to rise again until the balls have visibly risen.
  4. Brush the balls thinly all over with the rapeseed oil. One teaspoon of oil per round is enough to keep the surface from drying out and to let it brown evenly.
  5. Preheat the air fryer to 170 °C.
  6. Set four balls together with their paper into the basket in a single layer, spaced apart, and do not stack anything; the other four go into a second round. The balls weigh the paper down, otherwise it flies into the fan. Bake at 170 °C.
  7. Carefully move the balls around with a spatula so that the outer ones come to the middle, and carry on baking at 170 °C until they are golden brown all over. They are not turned over, because the risen yeast dough would collapse.
  8. Stir the jam smooth, pipe it into the lukewarm balls from the side with a piping nozzle and then roll each one in the sugar.
